Enoki Salmon Roll recipe


Smoke salmon 250 g sliced
Lettuce 1
Cucumber 1/2
Enoki mushroom 1 pack
Onion 1/2
Caper 2 tbsp
Horseradish 1 tbsp
Sprouts 1 pkg


Olive oil 3/4 cup
Vinegar 1/4 cup
Diced onion 1/2 cup
Sugar 1 tsp
Salt 1 tsp
Mustard 1 tsp


1. Mix dressing ingredients well and refierate for several hours.
2. Rinse lettuce and separate leaves. Place lettuce cups on plate.
3. Slice cucumber and onion thinly then cut again into strips 3-5 mm (1/8 in) wide. Trim the bottom of Enoki mushrooms and separate stalks into small bundles.
4. On a sliced salmon piece, place a little capers and horseradish, Enoki, cucumber, onion and sprouts.
5. On each lettuce cup, put 1 teaspoonful of dressing and let “salmon roll” stand on it.
